Serves 4 for lunch with crusty bread

1 small red pepper, 1/4" dice

3 radishes, cut into matchsticks

1/2 English cucumber, 1/4" dice

1/2 small red onion, 1/4" dice

1/3 c Kalamata olives, rough chop

1 small carrot, shredded

2 15 oz cans chickpeas, rinsed and drained

1 tsp This Little Goat Went to Belize Spice Mix

1 tsp salt

1 tsp honey

3 tbsp extra virgin olive oil

Toss all ingredients together and allow to sit for at least 30 minutes (or up to 12 hours) for flavors to meld. Toss again, season to taste and serve
