Serves: 4 

Time: 20 minutes 


1 1/2 lb Cremini mushrooms 

2 Tbsp Grapeseed or Canola oil, divided 

1 tsp This Little Goat Went to Belize Spice Mix, divided 

2 tsp Salt 

2 Tbsp White Wine 

1 Tbsp Butter 

2 Tbsp Parsley, chopped small 

2 Tbsp Scallions, sliced thinly on a bias  

Toss mushrooms with oil, salt, and Belize Spice Mix until completely coated, save bowl.   

Heat grill to medium hot.  Scrape and oil grate.  Place mushrooms in a grilling basket or over a cooling rack designated for grilling.  Cook until well charred and just tender, about 10-12 minutes, flipping once or twice during cooking.  

Remove from grill into bowl, and toss with wine, butter, parsley, and scallions until butter is completely melted and mushrooms are well coated.  Adjust seasoning with salt if desired.  Serve immediately.
