Grilled Delicata Squash with Belize Spice and Butter
Time: 30 minutes
2 Delicata squash
2 tsp This Little Goat Went to Belize Spice Mix, divided
2 tsp Salt
4 tsp Butter
2 Tbsp Parsley, chopped small
1/4 cup Sliced almonds, toasted
Cut squash in half lengthwise and scoop out seeds with spoon. Sprinkle each half with 1/2 tsp each of Belize Spice Mix and salt.
Heat grill to medium hot. Scrape and oil grate. Place squash cut side down on grill. Cook until well marked, about 3-5 minutes.
Flip squash and move to coolest part of grill, place 1 tsp butter in cavity of each squash and allow to cook over grill until tender, about 15 minutes.
Remove from heat, sprinkle with almonds and parsley, adjust seasoning with salt if desired. Serve immediately.
