Serves: 4 as an entree with salad 

Time: 30 minutes 

 

Ingredients: 

4 cups frozen hash browns, defrosted and drained 

1/2 c shredded cheddar cheese 

1/2 c shredded fontina cheese 

2 scallions, sliced thinly 

1 egg 

4 tbsp cornstarch 

6 tbsp This Little Goat Went to Wisconsin Spice Mix 

Salt 

1/4 c grapeseed or canola oil 

Sour cream and apple sauce for serving 

Mix together all ingredients except oil, sour cream, and apple sauce; with about 1 tsp salt until thoroughly combined.  Divide into 12 equal parts and pat into patties about 1/2" high.   

Heat 1 tbsp oil in pan until shimmering.  Add 3-4 patties and cook until deep golden brown on both sides and heated through (cheese will be visibly melted), about 4-6 minutes per side.  Hold in warm oven until all are cooked.   

Serve immediately with sour cream and apple sauce on the side.
