Roasted Brussels Sprouts with Golden Raisins

Yield: 4-6 servings

1 lb Brussel sprouts, outer leaves and bottoms removed
1 Tbsp Extra Virgin Olive Oil
2 tsp Honey
4 Tbsp Orange Juice, divided
1/2 tsp This Little Goat Went to India Spice Mix
1/4 c Golden Raisins
2 Tbsp Mint, torn
1/4 c Cashews, toasted

Preheat oven to 500.
Clean and halve Brussel sprouts. In a large bowl, combine sprouts with olive oil, honey, 2 Tbsp orange juice, India Spice Mix, and 1 tsp salt, toss until well coated. In small bowl, toss raisins with remaining orange juice and set aside.
Spread sprout mixture on baking sheet and cover tightly with aluminum foil. Bake for 10 minutes.
Remove foil, and stir sprouts, and cook for another 5 minutes, stirring once. Add raisins and cook for another 3-5 minutes, stirring occasionally to prevent raisins from burning. When sprouts are well colored and tender, remove from oven. Toss with mint and cashews, season to taste and serve immediately.
