Citrus Tzatiki

Yield: 4-6 servings

Ingredients:
3 Tbsp Dill, stems removed and course chopped
1 small Cucumber, seeded and cut in 1" pieces
1 1/2 c Greek Yogurt
2 tsp This Little Goat Went to Belize Spice Mix
Lemon Juice to taste

Pulse dill and cucumbers in food processor until coursely chopped. Place yogurt and Belize Spice Mix into small mixing bowl and add cucumber and herb mixture. Carefully fold together. Season to taste with salt and lemon juice. Refrigerate for at least 2 hours, preferably overnight, for flavors to come together. Adjust seasoning right before serving..
