Citrus Tzatiki

3 tablespoons dill, stems removed
1 small cucumber, peeled and seeded
1 1/2 cups Greek yogurt
2 teaspoons This Little Goat Went to Belize spice mix
1 tablespoon lemon juice to taste

Pulse dill and cucumbers in food processor until coarsely chopped. Place yogurt and Belize spice mix into mixing bowl and add cucumber and herb mixture. Carefully fold together. Season to taste with salt and lemon juice. Refrigerate for at least 2 hours, preferably overnight, to allow flavors to come together. Adjust seasoning right before serving..
