Roasted Green Beans with Sweet Onions

Yield: 4-6 servings

1 ½ lb Green Beans, ends removed 2 Tbsp Grapeseed or Canola Oil
1 small Sweet Onion, sliced thinly
1 tsp This Little Goat Went to India Spice Mix
½ cup Cashews, roasted and salted
Salt to taste

Preheat oven to 425. Line baking sheet with aluminum foil.
Toss green beans and onion with oil, 1 tsp salt, and India Spice Mix.
Spread in single layer on baking sheet.
Cook for 15 min, stir, and cook for another 5-10 minutes until well browned and tender.
Remove from oven, toss with cashews, adjust seasoning to taste and transfer to platter to serve. .
