Shrimp Cocktail w/ Spicy Mayo

2 lbs tail on shrimp, deveined, medium size
2/3 cup This Little Goat Went to Korea
1/3 cup lemon juice
2 Tbsp extra virgin olive oil
½ cup mayonnaise

Whisk together 2 tablespoons Korea sauce with 2 teaspoons lemon juice and mayonnaise. Set aside until time to serve.

Whisk together remaining Korea sauce, lemon juice and extra virgin olive oil. Set aside.

Sear shrimp in a hot pan over medium high heat. Once shrimp are almost fully cooked, about 4 minutes, add olive oil/Korea sauce mixture and toss to coat. Cook for 1 more minute before placing on a sheet tray in the refrigerator to cool completely.

Serve chilled shrimp with spicy Korea mayonnaise.
