Grilled Carrots with Sweet Citrus Glaze
Time: 20 minutes
1 1/2 lb Carrots, medium or large
2 Tbsp Grapeseed or Canola oil, divided
1 1/2 tsp This Little Goat Went to Belize Spice Mix, divided
1 tsp Salt
2 Tbsp Light brown sugar
2 Tbsp Mint, chiffonade
1/4 cup Pine nuts, toasted
Peel carrots and cut off ends. Cut large carrots in quarters lengthwise, medium carrots in half. Toss with 5 tsp oil, salt, and 1 tsp Belize Spice Mix until completely coated, save bowl.
Heat grill to medium hot. Scrape and oil grate. Place carrots smooth side down on grill. Cook until well charred and just tender, about 3-5 minutes per side.
While grilling, mix brown sugar into a paste with remaining Belize Spice Mix and oil in reserved bowl.
Remove carrots from grill directly into bowl, and toss with sugar mixture. Allow to sit for about minutes, tossing a couple times, until sugar is completely melted and carrots are glazed. Toss with mint and pine nuts, adjust seasoning with salt if desired. Serve immediately.
